Francesco Molinari is Full Professor of Fermentation Chemistry and Biotechnology at the University of Milan (Italy). He received his PhD in Chemistry in 1992. His current research interests focus on the development of biocatalysts (whole cells or isolated enzymes) for batch and continuous flow synthesis of molecules of interest in the food and pharma sectors. He also studies new fermentation systems for valorizing agrifood wastes. He is the coordinator of the courses of Food Science and Technology at the University of Milan.
