Dr. Ayelet Fishman is a full professor in the Technion Faculty of Biotechnology and Food Engineering. Since joining the faculty in 2005, her research interests have centered on the structure-function relationship of enzymes, and protein engineering techniques. Recently she also focuses on using enzymes for modifying structural properties of plant proteins for food applications. As of January 2020, Dr. Fishman is the Dean of Students at the Technion overseeing the welfare, personal advancement, and culture aspects of student life.
